    Focus 2 : Wine regions

    A harsh climate, spring frosts, a short period of ripening of the grapes, and yet you will taste original wines of character and high quality!
    Canadian winemakers have adapted to local conditions and are among the world leaders in the production of icewine (liqueur wine obtained from frozen grapes).

    Discover the most important wine regions around the great lakes, the Niagara Peninsula and the Okanagan Valley.
    Here you will mainly enjoy icewine, made from grape varieties such as Riesling or Vidal (a hybrid variety of Trebbiano and Rayon d'Or) frozen on vine foot.

    You will find the secrets of these mysterious wines. You will discover the late harvest under negative temperatures, the techniques of pressing and special winemaking, here nothing is done as elsewhere.

    You will also be able to explore new and emerging wine regions such as Quebec and Nova Scotia, where you will be able to taste Canadian white and red wines. You will savour wines that express the complexity of the terroir, mainly from Riesling, Chardonnay de Vidal but also from Merlot, Cabernet Franc and Pinot Noir.
